Quick Lunch Recipe: Buffalo Chicken Quesadillas

This may be one of the easiest, but best tasting, recipes you’ll find on this site, because the dip does all the work for you! We know you’re hungry, so let’s jump right in:

Ingredients:

  • Package of flour tortilla shells
  • 10 oz container Shindigs Buffalo Style Chicken Dip, or we also like Man Dip Fiery Buffalo Chicken Dip
  • Oil for pan-searing
  • Blue cheese dressing for serving (If you can get your hands on some Clemson Blue Cheese Dressing, do yourself a favor and get some!)

Preparation:

  • Heat oil on skillet over medium heat
  • Place tortilla with a scoop of buffalo chicken dip and cook until lightly browned
  • Place a second tortilla on top and mash down so dip adheres to tortilla and flip over
  • Cook until lightly browned and remove to serving plate
  • Cut into wedges and serve with blue cheese dressing

This is a great prep-ahead school lunch or grab-and-go snack for the work fridge. Just make sure to label it with your name, or it may be gone. We’re looking at you, Janice.
